This coffee reminds us of: strawberries, mandarin, raisins, and honey.
To obtain this delicious coffee, after being picked, the cherry is placed in containers for 3 days. This induces fermentation inside the cherry. After this, the cherry is depulped and placed back in the containers together with the “mosto” (the leftover water and juices from the initial storage of the cherries) for another 3 days. Then, the coffee is dried.
The seed (“pergamino”) is placed in hermetic bags for 30 days to stabilize. This is to rest and stop the drying process. This last step allows for flavors to come up and show better after roasting.
