This coffee reminds us of: vanilla, almonds, caramel and mandarin.
To obtain this delicious coffee, the cherry is picked from the trees, collected in sacks, and rested under the shade for 24 hours to induce complex compounds to transform into simpler ones. Then, the coffee is depulped, and it is placed for 18 hours in water in containers with no oxygen. After this, the seed is washed and dried.
The seed (“pergamino”) is placed in hermetic bags for 30 days to stabilize. This is to rest and stop the drying process. This last step allows for flavors to come up and show better after roasting.
