Doña Maria Cristina cultivates her coffee crop beneath the canopy of a native rainforest, which naturally shields her plants from pests and diseases. This thriving ecosystem has enabled her to achieve certification for "100% organically grown coffee and native forest conservation".
To obtain this delicious coffee, the cherry is picked from the trees, collected in sacks, and rested under the shade for 40 hours to induce complex compounds to transform into simpler ones. Then, the coffee is depulped, and it is placed for 18 hours in water in containers with no oxygen. After this, the seed is washed (water from a spring) and dried.
The seed (“pergamino”) is placed in hermetic bags for 30 days to stabilize. This is to rest and stop the drying process. This last step allows for flavors to come up and show better after roasting.
